Crisp Wafers Cake

One of the best things about summer is the endless get-togethers with friends and family where good conversations and great food is shared. However when its terribly hot there's almost no will to turn on the oven and that's when this amazingly delicious cake takes place. It doesn't get easier than this recipe and the result is always flawless. Rich and buttery and bursting with coffee flavor this cake will get you rave comments from your guests and no crumb will be left!


Ingredients:
  • 2 packets of crisp cookies
  • 250g butter
  • 250g caster sugar
  • 4 egg yolks
  • Intense flavored coffee with sugar [ I used Nescafe Intense }
  • Grated Cookies to decorate

Beat the butter until it turns into a white cream. While beating, add sugar gradually and then add an egg yolk at a time . Make instant coffee (I used Nescafe Intense ) in warm water and let cool.  Add about six tea tablespoons coffee to the previous dough and beat until all the cream is homogeneous.Dipe the Marie biscuits in coffee, one at a time and just for a few seconds , not soaking them completely - they have to stay whole . Place one in the center and 6 biscuits around the middle , and put the cream.Make another layer of cookies and the put the cream again.Repeat the process until the cookies end.Quando the biscuits are over, cover the cake with the remaining cream and spread it throughout the whole cake.Decorate with garted biscuits.Take it to the fridge for 4 hours until well chilled . Serve cold .

 
Ingredientes:
  • 2 pacotes de bolacha torrada
  • 250g de manteiga
  • 250g de açúcar fino
  • 4 gemas de ovo
  • Café sabor intenso com açúcar [usei Nescafé Intenso}
  • Bolacha ralada para decorar

Bata a manteiga até ficar um creme branco. Enquanto bate, junte o açúcar aos poucos e de seguida junte uma gema de cada vez. Faça café solúvel (eu usei Nescafé Intenso) em água morna e deixe arrefcer, Junte cerca de seis colheres de chá de café ao preparado anterior e bata tudo até o creme ficar homogéneo.Passe as bolachas Maria por café, uma de cada vez e durante apenas alguns segundos, para não as encharcar - têm de ficar inteiras. Coloque uma no centro e 6 bolachas à volta do meio, barre-as com o creme.Faça mais uma camada de bolachas e barre novamente as bolachas.Repita o processo até acabar as bolachas.Quando as bolachas acabarem, cubra o bolo com o restante creme e barre-o todo à volta.Decore com a bolacha ralada.Leve ao frigorífico durante 4 horas até ficar bem fresco. Sirva frio.
